Cucumber Salads . . ?

I'm putting together one or the other . . . which of the 2 would it be that you might prefer . . ?

A creamy cucumber & tomato salad with a sour cream dressing with a touch of dill . . . or . . . a cucumber & red onion salad with a tasty rice vinegar marinade . . ?

Not a sour cream fan so I'd have to go with the second option. Now I'm curious about that rice vinegar marinade too...

We sell a cucumber dill dip that I like to make and then add about a cup of white vinegar and mix it into the dip. Cut some garden cucumbers and put it in and refrigerate overnight.

2 cucumbers peeled & sliced thin
1/2 red onion sliced thin

1 & 1/2 cups of water
1/2 cup of rice vinegar . . . white vinegar would suffice, but, I use the rice vinegar
1 tsp. of sugar
1/2 tsp. of seasoned salt such as Lawry's

takes me about 12-15 minutes to put this together, I chill it for a couple of hours and it's ready for consumption.


We sell a cucumber dill dip that I like to make and then add about a cup of white vinegar and mix it into the dip. Cut some garden cucumbers and put it in and refrigerate overnight.

Sounds like a convenient and easy way to produce a tasty side dish, PR . .

Go cucumber, tomato, and red onion with vinegar.

That is another delicious option . .

I make this all the time. I usually use apple cider vinegar or sometimes red wine vinegar, and add 2-3 tbsp of olive oil. I also use spring onions in place of red onion, including the green tops and add halved grape or cherry tomatoes.

One of my favorite summer salads.
