For Those that Like Chili . .

Here's a great soup recipe that is simple, easy and delish . . from the Pioneer Woman on the food network.


Seven Can Soup

1 can each of :

kidney beans
pinto beans
black beans
diced tomatoes
chili with no beans
corn . . . I prefer to use a bag of frozen corn vs. canned, IMO, frozen veggies are better than anything canned, (whenever possible). I just don't buy canned corn, or green beans, peas, so on & so forth.
1 10 oz. can of Rotel

dump all the ingredients, and do not drain anything, into a large soup pot and bring to a boil, let simmer for at least 30 minutes.

Her recipe then calls for adding a small chunk of Velvetta . . . but, I prefer to add a couple, maybe 3 heavy tablespoons of Queso instead of the cheese, mostly because I like spicy food.

Bobby, this is like a chili-soup . . and so easy to make. Open the cans and dump . . stir occasionally while bringing to a boil, let it simmer . . ready to eat in 45 minutes.
 
That seems similar to my wife's taco soup.

It is one can each of:

Ranch style beans

diced tomatoes (we use the basil, garlic, and oregano)
black beans
mild rotel

one package of:

ranch seasoning
taco seasoning

one pound of ground beef

Then I mix in shredded cheese and sour cream and usually some oyster crackers. My wife used Fritos instead of the crackers. Obviously putting the cheese in right when it is hot is ideal.

It's pretty damn good.

I wouldn't use Fritos . . they're loaded with salt, and I haveta watch my sodium intake.

Yeah, they aren't as good anyway. I would rather go with nothing than the Fritos. There is also a spicy ranch seasoning we've used before that is pretty good.

Sounds great. However, Might need some more beans ...

This sounds perfect. IMO taco seasoning is the secret ingredient to make our homemade chili excellent.
