The problem with polls is voters view them as cumulative; i.e. if Team X is ranked #11 and loses, they should only fall to like #17 or if they win, they should only move up a few spots, depending on what others do.And/or you should have to have played a minimum of two FBS teams before you're eligible to be ranked.
Polls are fun in the pre-season and in the first week of the season to create excitement. The problem comes when the games actually begin and voters are reluctant to admit they were just flat wrong on teams like Auburn.
Fortunately conference standings determine the bowl tie-ins but the polls are going to become more and more contentious if they ever expand the playoffs. Perception matters a lot in this sport, more than most people seem willing to admit.

It's ridiculous that there is even a coach's poll since those guys are spending their Saturdays preparing for and coaching their own games. How in the world could they possibly see more than snippets of a handful of games before submitting an opinion about rankings?
As far as the AP poll, there have been numerous studies like this one exploring its bias. They all generally reach the same conclusion, which is that the SEC is consistently overrated. That isn't to say they haven't been the best conference, just that they get more credit for it than they should. Interesting note in the linked study is that ACC teams are significantly undervalued in the AP poll.
