I'm headed to Paris on Thursday with the wife



Ugh. If I hear another mention of sous vide, I might lose it on someone. It's obviously the fad right now as I have amateur chefs all over my facebook feed posting sous vide this and sous vide that. I'm sorry, but I typically don't plan my steak eating 72 hours ahead of time. I get a steak, I grill it. I eat it.

I put off doing Sous Vide for years because the dad annoyed me. Finally broke down and got one and it made me a believer. not only does it make the food taste better, but it really helps if you're cooking for a group who prefer different degrees of doneness.

FTR - you don't need more than an hour in the Sous Vide for most cooks. I drop my steaks, make a drink, prep sides, fire up the grill, and get going.

Trip Report?
Very good to great. Food and wine was amazing. Weather was a little cool and wet but not too bad. Went to Beaune for a couple days which is the heart of Burgundy. Ancient town that felt right out of a movie. Looking forward to another visit to Beaune.

Coitus with wife was greatly accelerated due to lack of work, dogs, and kids.
