Pho

Alright, so there's this Vietnamese place sort of near my house that I've never really paid attention to. They serve pho, so this weekend, I decided to give it a shot. I'm not gonna lie, it was pretty much the shit. I went with some sort of steak something or another. I can't pronounce anything I ate that day, but whatever it was, it was damn good. Highly recommend (if I could repeat what it was).

I make my own pho. Got the recipe from a vietnamese woman at a oriental market here. Takes all day to make but Its incredible. Btw according to her Its pronounced “faaaa” with a raised inflection at the end as if u were asking a question. Faaaaa?

I applaud your sense of adventure. There are some Vietnamese restaurants on Central Avenue close to where I work. Might just have to try it out myself.

Did you embarrass yourself trying to order?
 
A little tough to find. Small place. No outside seating today bummer. Went w the Miso Ramen and Asia went w the Shoyu Ramen. Enjoying a Sapporo waiting on the food.
Sucks that there's no outside seating today. That's one of the best things about it, especially since it's so small. I've actually never eaten inside the place before.
 
Worth the trip?
Sorry guys. After lunch I rushed home for a tee time. Played a round while watching the Masters too (iPad in the golf cart). Anyway our first experience at Futo Buta was a pleasant one. We really enjoyed it. The place is really really tight seating but we got there right when they opened so it was all good. We started w the Hamachi Crudo which is yellowtail, avaocado, grapefruit, serrano peppers, and ponzu (tangy soy based sauce). Honestly this was one of the best dishes I’ve ever eaten. It was orgasmic. We both really enjoyed our Ramen too. I got the Miso (pork/chicken broth, white corn, pork belly, scallion, bean sprouts, bok choy, onsen egg, and sesame). The broth was excellent and flavored beautifully. The pork belly was rich, fatty, and very tasteful. I absolutely love runny eggs. Get them for breakfast all the time. But next time I think I’ll get the Ramen w out it bc to me it was just a really really rich dish with it. I love spice so I added some sriracha. The cocktails were good as well. Ended w some black seed ice cream. Kinda tasted like chocolate so we enjoyed that too.

Now the whole Pho v Ramen thing. I can absolutely see why people prefer Ramen over Pho but to me I’d still choose Pho if the two were sitting beside each other. (Disclaimer the only Pho I’ve ever eaten is what her mom makes). Don’t know if that makes a difference or not or maybe that’s just what I’m used to.

We’re going back in May and taking her sisters and cousins. Can’t wait. Thanks @coolwaterunc for the recommendation. I’d definitely encourage anyone in the area to give it a go.

Just some observations/considerations:

1. Thanks for the recap. Hope more folks consider trying Ramen

2. Sounds like you got a good bowl of soup. Consider asking for a spice bomb next time if you want to spice it up. Japanese spicy oil and powder compliment the broth better than Siracha

3. Comparing NC Ramen to Asian’s mama’s Pho is like comparing BBQ made by a good southern cook vs something you’d get in Connecticut at a Bar-be-Que place. The flavors tend to be muted to appeal to a broader base. So far, I’ve found its really hard to get good Ramen in the States. I live in the DC area and there are really only 2 legit places. Obviously, NYC is the place to go barring a flight to Tokyo.

Regardless, both are pretty awesome choices.

We actually asked for all of their hot sauces. There were three. Sriracha, some powder of some sort, and an oil (I’m assuming this is what you’re talking about maybe just not mixed together?). I tried the oil by itself and really didn’t care for it. Reminded me of something on a Korean dish. The powder was good. Maybe mixing the oil and powder together would have been the perfect combo and I will definitely do that next time. Thanks.

Yes. Usually the powder and the oil are combined in a little cube. Together, they work well with Ramen. The cool thing about Ramen is basically, you can make 100s of variations of it. The hard part is getting the stock made well. Ivan Ramen is supposed to be the best in the world depending on who you ask. White dude went to Japan to learn from the best. Took him a long time, but he eventually won them over and became a success.

Futo Buta rocks. Get the Crispy Rice squares, comes with some raw ahi tuna mixed with some seasonings and scallions. Dip a chunk of the rice in wasabi soy and add some of the tuna. Killer. The fried Brussels Sprouts topped with Bonito flakes are great too.
The egg does make it very rich. Put some Togarashi in there and it will sing!

I love Pho because of the herbs and jalapenos, and how fresh it always tastes. I like it with the raw eye of round that cooks when you pour the screaming hot broth over it.
