Can't bring myself to buy one. $700-1000 no way, I can buy 10 Weber's with that. My current one is 9 yo.
When I grill steaks over charcoal, I add sassafras strips for added flavour.
At what point do you add meat to charcoal? I wait till half the black is off the coal. I never use match lite garbage or starter fluid. Charcoal chimney all the way

Yeah, that was me. I built a 1800' shed/kitchen combo. I am pouring a 11' pad down the backside to cover eventually. Will house all my grills and outdoor stuff. The inside will have custom cabinets with a 12' farm table I'm going to build. Also planning a fire pit for the front area. The building is 65' long with half of it being a wood shop. The rest is a full bath, storage, and kitchen/dining.
I am blessed with a good paying business. This is a dream I've always had. We live fairly modest. After I finish this, we will work on retirement funding.I wish I had your $ . . I am so envious, Gray.

I do cook my marinated flanks over charcoal . . I have an awesome and very easy marinade that I use for my flanks:
2 tbsp. of brown sugar
2 tbsp. of yellow mustard
small can of crushed pineapple
soy sauce to cover
I mix the first 3, then only enough soy sauce to cover, marinade overnight or for an extra day.
I use a simple lemon juice/soy sauce marinade on steak. Everyone seems to like it.
What ratio juice/sauce . . ?
About 70/30 lemon juice. I like it a little tart and a little soy sauce goes a long way.
